Welcome to Happycake's very first episode of: Find Whatever's in the Fridge and Throw it into Your Breakfast! There are plenty of mornings when I come downstairs to my kitchen and just stare into the fridge thinking, "What am I going to have for breakfast?" But fear not! You can always be creative with even leftovers from the night before and make an omelette, or just take a few ingredients and make any type of eggs you desire! So, one of my favorite ways of making eggs is today's post. It's simple, quick, and guaranteed to make your tastebuds jump in excitement. Go ahead and treat yourself to a delicious breakfast!

Serves: 1
What You'll Need:
•2 eggs
•2-3 leaves of sage (if the leaves are smaller, go for 3)
•desired amount of goat cheese
Directions:
1. Turn skillet or pan on med/high
2. Wash, pat dry, and mince sage. (It is VERY IMPORTANT to make sure they're dry because water and grease do not mix!)
3. Swirl some butter into skillet/pan. The skillet/pan should be hot enough that the butter melts easily and doesn't burn.
4. Drop minced sage into butter and let it crisp up a bit.
5. While waiting for the sage, mix the goat cheese with your eggs in a separate bowl. The cheese will stay clumped, so make sure to break it up with your fork!
6. Pour the egg mixture into the middle of the pan, over the sage. Using your fork, start from the outer part of the pan and bring the egg mix to the middle. This fluffs up the eggs.
This looks delicious! I wonder if I can add a little heavy cream to the eggs. It helps with creating the fluffy texture too.
